The owner, Kyung Cha opened Tokyo Sushi in the spring of 2001, with a vision of creating New Paltz’s finest Japanese dining experience. , Kyung infuses every dish he creates with his extensive knowledge and passion for perfection.   Once word of his tasty signature dishes got out, offers from many well known restaurants landed on Kyung’s plate.  Chef Kyung knew that greater challenges and opportunities awaited him in New Paltz, New York.
